Cookies

Chocolate chip cookies have got to be one of God's greatest gifts. They just make everything a little better and are the perfect way to end the day. Monday I went to Whole Foods for lunch with Sarah and we about cried when they were out of chocolate chip cookies. Then we went to Muddy's Bake Shop to console ourselves, but they were closed on Mondays. So needless to say, I have been craving chocolate chips cookies all week. And tonight seemed like a great time to bake. Oliver is working late....busy season....and I am not in the mood to do homework. Anyway, as I was baking I thought I might should post this recipe. This is my favorite recipe for chocolate chip cookies. I literally make a batch about every other week and put them in the freezer. These are the best---from Paula Deen! Enjoy!

1 stick butter, softened
1 cup light brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon instant coffee
1/2 bag of chocolate chips

1. Cream sugars and butter together with electric mixer
2. Beat in egg and vanilla
3. Add dry ingredients and using a spatula stir until blended
4. Stir in coffee and chocolate chips
5. Bake at 375 for 11 minutes

The Sweetest Thing

Is this not the most beautiful child? Olivia is so pretty---and she is not even a month old! Most newborns are not this cute! This past Friday night Oliver and I babysat Olivia. It was so much fun! We just sat on the sofa and looked at each other (or I looked at her, she slept most of the time).

Saturday night we had a little dinner party. I spent all day cooking and cleaning. Oliver had to go down to the office and didn't get home until after four. When he got home, he crashed on the couch and I let him sleep till right before our guests came. On SUNDAY, I noticed that right before a certain someone had crashed on the couch, he put his CHEWED UP GUM on my coffee table and did not move it! I am so embarrassed!

It snowed in Memphis this morning! It didn't stick and was gone by 2 p.m. but look at our house:
That's our dog, Ally standing outside looking all awkward. She is a Vizsla, a Hungarian pointer, but in pictures she looks like an alien-dog-mutt. Seriously, this dog could not take a good picture to save her life. We've been trying now for almost four years and do not have one decent picture.

New Year's Resolutions

My 2009 New Year's Resolution: "I will not wish for the weekends on Monday......starting in August." I know that you should neverwish your life away, and I don't except for the next few months! By August 1, 2009 I will be finished with lawschool and the bar exam will be behind me. I have never looked forward to anything more!!!!!!!

We had a great New Year's Eve at Paulette's with all our new Memphis friends. We got to play with our niece on New Year's Day. Oliver cooked black eye peas but they were not very good. We each just had one bite for good luck and threw the rest out.

We have a lot to look forward this year: Lollie's wedding in February, Sarah's wedding in March, Steven's wedding in April, Thomas's, Ryan's, and my graduation in May. AND Oliver just informed me that Kirk Herbstreet on ESPN said Ole Miss football is going to be ranked top FIVE next year. HOTTY TODDY!

Happy New Year Kyle--since you are the only person who reads my blog!
