Chocolate chip cookies have got to be one of God's greatest gifts. They just make everything a little better and are the perfect way to end the day. Monday I went to Whole Foods for lunch with Sarah and we about cried when they were out of chocolate chip cookies. Then we went to Muddy's Bake Shop to console ourselves, but they were closed on Mondays. So needless to say, I have been craving chocolate chips cookies all week. And tonight seemed like a great time to bake. Oliver is working late....busy season....and I am not in the mood to do homework. Anyway, as I was baking I thought I might should post this recipe. This is my favorite recipe for chocolate chip cookies. I literally make a batch about every other week and put them in the freezer. These are the best---from Paula Deen! Enjoy!1 stick butter, softened
1 cup light brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon instant coffee
1/2 bag of chocolate chips
1. Cream sugars and butter together with electric mixer
2. Beat in egg and vanilla
3. Add dry ingredients and using a spatula stir until blended
4. Stir in coffee and chocolate chips
5. Bake at 375 for 11 minutes
